La confiserie, qui en est l'héritière, perpétue depuis lors les savoir-faire des nougats de Provence, des calissons d’Aix et d’une multitude d’autres douceurs. Pour les savoirs, le Musée du Calisson propose, à 10 min du centre, de découvrir l’histoire de l’amande de Provence et de la célèbre friandise dans un espace contemporain mêlant outils d’époque et nouvelles technologies avec de larges baies vitrées donnant sur les ateliers de fabrication.
