Calissons have a remarkable taste and finesse. Founded in 1874 by a Swiss confectioner, Maison Parli, a venerable institution in Aix, celebrates its 151st anniversary^E year in 2025. Her secret? Full control of the calissons manufacturing cycle, which begins with the confection of the fruits, on site, using ancestral methods. The dough, rich in almonds and sweetened with fruit syrup, is ground with ancient granite rolls that preserve the texture of the ingredients. In 2022, 3,000 almond trees were planted on 10 ha cultivated organically in Ventabren, reflecting the company's desire for permanent improvement.

"Hat's" : "pain" en arménien, est un clin d'œil aux origines des fondateurs. Arrivée en finale régionale à l'émission "La meilleure boulangerie de France", l'enseigne est aujourd'hui à la tête de 10 boulangeries sur Marseille, Aix-en-Provence et Carnoux. Jean Baptiste Lhote, artisan boulanger et directeur d'exploitation, recrute des boulangers passionnés, partageant le même amour du produit, savoir-faire artisanal. Les vendeuses mettent leurs connaissances et leur passion du pain à disposition des clients, afin de leur faire découvrir au mieux la gamme de produits.

La modernité de cette pâtisserie qui privilégie produits de saison, circuits courts, utilisation raisonnée du sucre et des matières grasses. Le CV du capitaine en impose : Florian Grad, récompensé notamment par le Trophée Passion Dessert 2019 du Guide MICHELIN, est passé par le Ritz à Paris ou la Villa Madie à Cassis, dont il a été le chef pâtissier pendant plusieurs années. Il travaille avec sa compagne Inès, pâtissière elle aussi, qui apporte sa touche féminine aux créations. Leur rayonnement dépasse largement les frontières de Puyricard !

The taste of sweet Provence. In 1920, Ernest Guillet created La Nougaterie du Roy René in Aix, a small confectionery workshop in the purest local tradition. Since then, La Confiserie du Roy René, which is the heir to it, has perpetuated the know-how of calissons d'Aix, nougats de Provence, fruit jellies and a multitude of other delicacies. The elegance of the wines and the setting of this place steeped in history since 1118! Long closed to the public, this 12th century wine estate^E Century has come back to life ever since
the arrival in 2021 of Jean-Marc and Wendy Gobbi, the new owners. The castle is a former priory surrounded by 13 ha of vineyards and olive trees
and lavenders. Between natural splendors, bare stones, Romanesque chapel and paved courtyard, the site has a crazy charm! The vineyard, located in the Luberon Regional Natural Park, has regained its letters of nobility: racy and fruity reds, fine and long-lasting rosés, floral and acidic whites.

The land steeped in history. At the XIII^E In the 19th century, Montaurone Castle was part of a Templar commandery. Forest of oaks, poplars, elms, springs and meadows cover this beautiful family estate established on a limestone plateau at an altitude of 200 m, crossed by the Touloubre river. The vineyard, certified organic since 2016, extends over 91 ha belonging to the Decamps family, owner-harvester for over 40 years. The estate also has 2,200 olive trees on 8 ha, also grown organically.

The sharp selections of an independent wine merchant. La Cave du Vigneron is a family business: in the early 2000s, the sommelier Stéphane Jaen, trained at the University of Wine in Suze-la-Rousse, took over the reins of the brand created by his father in 1978. It now has three addresses in and around Aix. Qualified wine merchants are there to serve as guides in the 2,000 references of wines, champagnes, spirits or beers offered in stores.
