Le savoir-faire Après sept années passées au côté de Ludovic Turac chez Une Table au Sud, dont trois en tant que sous-chef, et un passage éclair à Top Chef 2019, Fanny (surnommée Favouille depuis toujours) ouvre en octobre 2020 son propre restaurant. Elle fait appel aux producteurs locaux pour nous concocter le meilleur : Marco le pêcheur pour le poulpe, les oursins ou les daurades, Cécile pour les légumes, viandes label rouge… Une cuisine du marché savoureuse à l’ardoise.

Grandma's food cooked by real grandmothers. Mamone was launched last summer by Baptiste Brot and Fabien Djennaoui in downtown Aix. The concept: simmered dishes to take away or to be delivered, prepared every day in a space open to the street where their appetizing scents spread. They are made by women who master the recipes of yesteryear, those who cooked for a long time to exhale the flavors and ensure the melting. Bistronomy as we like it. Chef Romain Meyer, a child of the Mediterranean, took over this intimate establishment in the old center of Aix in 2019. When Yann Solana, captain of the Le Quillé ice cream shops, embarks on a new adventure, he gives his all: cooks trained at a school of master crepe makers in Rennes, partnerships with local producers and artisans, creative and generous fillings, both for savory pancakes made with local buckwheat and for sweet wheat pancakes. La confiserie, qui en est l'héritière, perpétue depuis lors les savoir-faire des nougats de Provence, des calissons d’Aix et d’une multitude d’autres douceurs. Pour les savoirs, le Musée du Calisson propose, à 10 min du centre, de découvrir l’histoire de l’amande de Provence et de la célèbre friandise dans un espace contemporain mêlant outils d’époque et nouvelles technologies avec de larges baies vitrées donnant sur les ateliers de fabrication.
