Se régaler de saveurs et de savoirs. En 1920, Ernest Guillet, artisan nougatier passionné, crée à Aix La Nougaterie du Roy René, un petit atelier de confiseur dans la plus pure tradition provençale. La confiserie, qui en est l'héritière, perpétue depuis lors les savoir-faire des nougats de Provence, des calissons d’Aix et d’une multitude d’autres douceurs. Pour les savoirs, le Musée du Calisson propose, à 10 min du centre, de découvrir l’histoire de l’amande de Provence et de la célèbre friandise dans un espace contemporain mêlant outils d’époque et nouvelles technologies avec de larges baies vitrées donnant sur les ateliers de fabrication.

Acquis par Philippe Kessler en 2001, le domaine est modernisé afin d'améliorer la qualité des vins. Le travail de mise en valeur est aujourd'hui poursuivi par son épouse Sophie Kessler-Matière et son fils Thomas. Ces derniers sont engagés dans des démarches particulièrement respectueuses de l'environnement, ce qui leur a valu la certification « Haute Valeur Environnementale » de niveau 3 pour tous leurs produits. Les vignes entourées de bois qui s’étendent autour de la bastide, descendent les collines et arpentent les vallons : un paradis provençal qui s’ouvre cette année au public pour la première fois ! Emmanuelle Baude, ex-notaire passionnée de vin, a choisi le bio pour préserver au mieux cet environnement enchanteur. Plusieurs vestiges témoignent de la riche histoire du site, mais c’est le quai de vinification édifié dans les années 1960 qui a donné son nom au domaine : une tour audacieuse construite selon les proportions du nombre d’or.

Aurélia Gauthier, après plusieurs années d'expériences chez Antic Wine, l'un des meilleurs cavistes de France, puis à Londres, chez Selfridges et à la Compagnie des Vins Surnaturel, rejoint son sud natal pour y créer une cave consacrée aux vins et champagnes de terroir. The quality of wines and practices of an organic estate since 1996. This human-sized property has 36 ha of vines. No less than 12 typical southern grape varieties are grown there, including rarities such as Counoise. The wines, produced in all three colors in blends or as a single varietal, are aged in stainless steel tanks, barrels, amphorae or concrete eggs, sometimes without added sulphites. A lot of personality and typicity for the whole range!
