Les poissons d’eau douce sont ici à l’honneur : ils frétillent à la carte aux côtés d’autres richesses locales comme le cochon Roi Rose. Le capitaine des lieux, Florent Martin, a créé cette adresse en 2005 en hommage à ses origines avec des illustrations de son père Jean-Jack Martin, un "aborigène tourangeau". Également petit-fils d’une cuisinière hors pair, Florent a puisé dans ses inspirations familiales pour célébrer La Loire dans l’assiette.
